Carmelita, who has been running a cooking school in Bologna for over ten years, has started a blog, cookitaly, to share her expertise. Her food is based on authentic Italian cookery, although Carmelita often adds a little twist of her own. The cookitaly blog is relatively new, but you can already find fantastic recipes such chocolate sauce for Roman oxtail, pomegranate braised rooster, and especially for Valentine’s Day, Hearts upon Hearts (heart shaped polenta crostini, topped with fried fresh artichoke hearts, on white cream cheese, surrounded by two very red Mediterranean shrimp).
The teacher in Carmelita is apparent in every recipe – she gives detailed instructions on preparation and cooking, making it incredibly easy for even the inexperienced cook to produce a perfect dish. And if the reviews of her cookery classes are anything to go by, you’ll be signing up for one before you know it!
